One of our favorite sandwiches is chicken salad. There are so many yummy ways to spice up some canned chicken and I try to make different ones ever so often. One of my favs has to be cranberry pecan. I love the flavors together and I usually have all the ingredients around to make a yummy and quick lunch.
What You’ll Need:
Canned chicken, drained (I like white meat)
Dried Cranberries (usually by raisins or salad fixings)
Pecans
Mayo
Garlic Salt
Drain chicken and place in a bowl. Add in a few dollops of mayo. I don’t measure, I just guess and add in more if needed. I’m not a huge mayo fan so less is best for me. Stir in cranberries and pecans as wanted. Add some garlic salt to taste. Store in fridge for 30 minutes for flavors to mix and it to get cold.
Mix up on your favorite bread and you’ll have a yummy sandwich. I make these for my work lunch several days a week. It’s super easy and the sandwich is does not get soggy!
