If you are anything like me, there are several nights a week when you’re running from here to there and back again. From work to after school pick up, soccer practices, girl scouts, and more. It seems like our weeks and weekends are packed full. Some nights we even have evening school activities for one or both of us which leaves me little time to have a big dinner ready. Since I’m a working Mom, I don’t have much time and I cannot be in the kitchen all day long.
So what is a busy parent supposed to do? What if I told you that you can have a great meal ready for your family in less than 30 minutes? Even on your busiest of busy nights you can pull this off!
Freschetta frozen pizza is a great option and paired with these easy roasted vegetables you will have a wonderful meal ready for your whole family.
I always try and to remember to pick up a frozen pizza when I’m out shopping. I found Freschetta at my local Walmart. There are several different toppings so there is something for everyone. The sauce is made with 4 vine-ripened tomatoes and 100% real provolone and mozzarella cheeses.
One thing my kids love are roasted vegetables. I love to mix and match different kinds and add a variety of color. These easy roasted vegetables cook while your pizza is cooking so you can put them in at the same time and get a few things done around the house.
First you need to wash and cut up your veggies. I always use carrots because my kids love them the best! One time saving tip is that I like to prep my veggies as soon as I come home from the store. I wash and put them in containers to use when I’m ready for meals.
This time I used carrot chips. They are fun for little fingers to eat! I also use all colors of peppers, cherry tomatoes, and baby potatoes are fun too. Put the veggies in a bowl and drizzle in olive oil and sprinkle on garlic powder. Transfer the veggies to a lined baking sheet and bake everything on 400 for 20-25 minutes. I stir/flip them up about 1/2 way through roasting to get them cooked on both sides.
Your pizza will be cooking at the same time so it makes it super easy. In no time, dinner is ready! My busy night just got easier. The pizza was so good! It’s freshness you can taste. It is undeniably the better choice in frozen pizza. I will for sure be stocking up on Freschetta pizzas to have next week on another busy night!
