Frito Pie (Kid Friendly, Easy Meal)

Spring is here and it’s time to start making some easier meals in the kitchen. We are really busy this time of year (like most families) with sports and school events. I’m always in need of a fast and delicious meal everyone will enjoy.  Turkey Frito Pie is a hit in our house!

Turkey Frito Pie:
1 lb of turkey (or ground meat)
1 package of taco seasoning
1 can of black beans
Frito chips
cheese
green onions to garnish (optional)

Brown your meat. Add water and taco seasoning. Drain beans. Stir in beans when meat is cooked and has seasoning. Cook on medium for  few minutes to get everything hot. Add mixture to a serving bowl. Get cheese, chips, and green onions ready to assemble. In a bowl put Frito’s on the bottom to cover. Add the meat/bean mixture on top of the chips. Sprinkle on cheese and onions to garnish. From stove to the table in less than 10 minutes! Dinner is served!! I sometimes make up the meat mixture ahead of time. It takes just a few minutes to microwave or reheat in oven when you want dinner.

*Another option: If you don’t want to use Frito’s, you can make the meat/bean mixture and instead of chips, add it to a tortilla. This would also make a good kids lunch or meal on the go. Enjoy!
