We love dips around here, especially anything including cream cheese. This is a great veggie dip. It’s full of good veggies. Do your kids like veggies? Mine do, but I wasn’t sure if this would be a hit because it’s got the good veggies, but all mixed together. If this isn’t proof of how my 3 year old liked this dip then I don’t know what is!
He was licking the mixers of the leftover veggie dip! He LOVED IT! He ate it on crackers for days. Do I have your attention now? This dip is no joke!

For the veggie dip you will need 1 red pepper, shredded carrots, fresh parsley, and 8oz lite cream cheese. Leave the cream cheese out a bit so it can soften. Wash and chop the red pepper and some parsley. In a bowl add a handful of shredded carrots (you can save the rest for another time!) and a handful of some chopped parsley. I use about 1 cup of the shredded carrots and 1/2 cup of the parley. Add the entire chopped red pepper and the cream cheese. If you are taking this to a party you might want to double this! It’s that good. Using a mixer, mix together the ingredients until they are mixed well. I add some garlic salt but it is not necessary. When you get to the mixing part, this is the time to have your kids help you. Mixing is so fun!
