While searching for a simple sandwich spread at the grocery store I came across some pimento cheese. I bought some, and at $3.99 for a small container I sure hope my family liked it! Turns out my husband and 15 mth old just loved it! After eating it myself I liked it too and decided that I could make it myself and it would be tastier. Guess what? I did and it was WAY better than the store bought brand. Go Me! It was extremely easy to make and you might even have most of the ingredients on hand already!
Pimento Cheese:
2 cups shredded cheddar cheese
1/2 cup paremesan cheese
1/2 cup of cream cheese (softened)
1-2 globs of Mayo
1-2 small jars of pimentos (found by pickles, olives)
dash of garlic powder
Your favorite bread
Basically you throw everything in a large bowl and add the mayo last. It’s not an exact measurement. I said 1-2 globs. I’m not a mayo fan but you need the cheeses to mix in. You shouldn’t see too much white. 2 globs would probably be best. And that’s it!
It should look something like this. Then you’re ready to spread it on your favorite bread. I like wheat bread. You can get extra fancy and remove the crusts and make fun finger sandwiches. That’s what I did today and my 15 mth old gobbled them up saying “Mmmmmmm!” He just loves to eat! So go right now and make this! It’s the easiest thing and would be great for school lunches or picnics. This puts the store bought cheese spreads to shame! Promise 🙂
Just a little funny on my husband. He loves this stuff but can NEVER remember the name. He calls it everything from Meadow to Palm-edo to Palento. He just can’t get it.
