I love that summer is almost here. To us it means more grilling outside and less cooking in the kitchen for me ๐ I do love to roast some fresh veggies. If I’m not making my famous Ranch Carrots or yummy roasted Brussels Sprouts, I’m making dill veggies. Roasted dill veggies can be any veggie your kids will eat. You can do carrots, zucchini, tomatoes, squash, or even do a mix of several. We love zucchini and it’s even better roasted in the oven with dill!
Start by preheating your oven to 400. This is the only bad part. The oven has to be really hot so it will heat up your kitchen! Wash and slice up your veggies like sticks. This night we had fresh zucchini and I cut it like french fry style. Drizzle olive oil over the veggies and a dash of salt on a foil covered pan. Sprinkle on dill. We love dill so I don’t hold back on this part. The more the merrier. Place in the oven and let the oven do the rest. I take it out after about 20 minutes to flip over and add more dill. Cook an additional 15-20 minutes. If you like it crispy then it might need to roast a little longer.
After 40-45 minutes your dill veggies should be done. Add these to your favorite grilled meal like hamburgers or pork chops. I could eat these as a meal all by themselves! My kids love to dip them in my yummy Greek Yogurt Ranch. It has way less fat than regular Ranch and tastes great. Happy Summer Grilling ๐

I haven’t done a lot of experimenting with Dill, but this sounds yummy! We planted two zucchini plants in our garden this year, so we should be able yo try your recipe soon!
