Sunday’s at our house or known to be bagel sandwich days. It’s an easy after church, brunch type lunch that we all look forward to. My parents got us started on these and they are so yummy. It’s been going on almost every Sunday at our house!
What you need are good bagels. Not the frozen kind! Good bakery bagels you slice up and toast. Fry some bacon (or microwave like us) and slice up tomatoes and onions. Spread on good cream cheese (we like the garden veggie) and stack everything up on the bagel and enjoy. I eat mine open faced but my husband likes to make a sandwich. We usually pair this with a fruit salad and this completes our Sunday Brunch. Pretty simple, and yummy. My kids love it too!
*I know that bagels are not the best of foods. I do keep bagel things on hand for me when I need to swap out for a healthier treat! They are just as good on the bagel thins with 1/2 the calories.
