Ice Cream Cookie Sandwiches are the perfect way to celebrate summer! Now that summer is in full swing and we are going from swimming to playdates and backyard BBQ’s, it’s fun to have a nice sweet treat at home. These Cookie Ice Cream Sandwiches are easy to make and a total hit with the kids.

This recipe would be fun to make with the kids. You could even make some ahead of time and store in the freezer until ready to serve.
Ingredients: This recipe makes 6 Ice Cream Cookie Sandwiches
- 1 dozen chocolate chip cookies
- 1-2 cups of Mayfield Creamery Ice Cream (I used vanilla bean)
- Sprinkles to garnish in a bowl or plate
Bake and cool some cookies. Spread some ice cream over 1 cookie and place another cookie on top. Gently press together. Roll the side in sprinkles to make the sandwiches festive. Red, white, and blue are perfect for the 4th!
Place the cookies in a freezer safe dish and freeze for a few minutes to get ice cream to set. Serve and enjoy!
