These cinnamon chip pumpkin muffins scream all things fall and all things delicious! I cannot get over how simple they are to make (you only need 3 things!!!) and how fast they get eaten.
As soon as I see the cinnamon chips come out on store shelves I’m scooping up a few bags to make this recipe over and over again. (and you should too!)
Is it fall yet where you live? Here in Dallas, it seems to never turn fall. We got from 100 degrees to 90. That’s pretty much our fall. We are pretty much used to it but we still love to complain about it. Even with warm temps we still like to pretend we have a fall and it’s still fun to bake and decorate for fall. These cinnamon chip pumpkin muffins will make your house smell especially like fall and that’s wonderful too!
Cinnamon Chip Pumpkin Muffins
1 yellow cake mix
1 15 oz can pumpkin pie mix
1 10 oz package of cinnamon chips
Preheat the oven to 350. You can do mini muffins or regular muffins too. They turn out great either way!
I lined my muffin tins with cupcake liners and sprayed them. Mix the 3 ingredients together in a bowl with a spoon. Fill each muffin 3/4 of the way. Bake for about 18-20 minutes making sure they are cooked all the way through.
Here they are ready to get baked.
Now let me just say that I am not a huge pumpkin fan. I love bright orange decorative pumpkins that fill our houses during Halloween and fall time. I’m not a coffee fan so I don’t drink pumpkin flavor.
I wasn’t really sure my kids would eat these due to the ingredients either so the first time I was skeptical. The pumpkin taste isn’t overwhelming. If you or the kids like cinnamon (mine love it!) then I think these will be a hit too. My family loves these! These are fun to make when the kids are at school so when they come home the whole house smells so good!

I’m not a fan of pumpkin either but these are delicious. I’m going to try the recipe in a Bundt pan for an easy to slice cake.
