I don’t know about you but by the time the weekend rolls around I am OVER cooking. But we have to eat! I needed some easy go-to, quick meals (mostly sandwiches) that I could throw together fast and be done in the kitchen. Something we can eat on the way to soccer games or at a picnic.
Here are some of our favorite lunch ideas…
Chicken Salad:
I use canned white meat chicken to make things easy. There are so many yummy versions of chicken salad you can do. We like mayo, slivered almonds, and some type of fruit either grapes or apples. Sometimes I’ll add chia seeds. It’s quick, easy, and makes a good working lunch sandwich too.
Egg Salad:
This is very similar to chicken salad but with no chicken. I use boiled eggs, mayo, garlic salt, and lots of dill. I think the dill makes it taste so good. My kids are not fans so this is something they steer clear from. I can make a batch and it can be lunch for our week or weekend.
Pimento Cheese:
I’ve blogged about it before HERE. I do sometimes buy premade spread, but I LOVE to make my own. It’s so much better and more affordable. My kids are not fans but when we have this they’ll take a PB& J!
Crock Pot Meals are also great for weekends!
Chicken: Make this chicken on a Saturday morning and you can do a lot of things with it. Make chicken tacos or enchiladas. Very yummy and goes with a lot of recipes.
BBQ Pork: I just shared this recipe last week and it’s so good! Talk about easy! You can make it on a Friday night and it will be ready for your weekend pool party or sandwiches at home.

Great lunch ideas. I love that you use chia seeds in your chicken salad. Do have anymore recipes/ideas to use them up? I bought (hubby bought lol) a big container when we were taste testing some smoothie recipes.

I love to make pulled pork on the weekend. I can throw it in the crockpot and not have to cook the rest of the weekend! I usually try to find things that keep me out of the kitchen as well!
