Healthy Banana Oatmeal Blender Muffins

`We love all things muffins around here. I think my kids like them because they are small and easy to eat. I like them because they are easy to make and great for breakfast for snacks. When I got my new Nutri Ninja® Nutri Bowl™ Duo™ I was looking for something I can make that is snack related and healthier. I’ve been trying to eat healthier and incorporate some healthier options for my kids to eat also. These healthy banana oatmeal blender muffins are the bomb! Check out the recipe below and watch my video I made with my kids!

This recipe does not add in any extra sugar (unless you are doing the chocolate chips!) and there is no flour. After making these one time (and they were delicious!) they were not sweet at all. Next time I might experiment with some apple sauce or some mild sweetener to give a little more taste. My kids loved them though and so did my husband. We ate them for breakfast and snacks.

Healthy Banana Oatmeal Blender Muffins

Ingredients

  • 2 sliced bananas
  • 2 cups of oats
  • 2 eggs
  • 1 cup of greek yogurt (plain)
  • chocolate chips (optional)
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking powder
  • muffin tins, sprayed
  • cupcake liners sprayed

Instructions

  1. Line muffin tin and spray generously. Preheat oven to 350
  2. Using a blender, blend together the oats, eggs, bananas, yogurt, vanilla, and baking soda until it's a good consistency.
  3. Stir in chocolate chips
  4. Scoop out some of the mix into the sprayed muffin tins
  5. Bake at 350 for 20 minutes or until it's cooked through the middle (use the toothpick test)
  6. Cool on a baking rack
  7. Store in airtight container

To make these I used the Nutri Ninja® Nutri Bowl™ Duo™ It’s awesome! I loved how the bottom had suction cups which made it stay in place! This is one of my favorite features! It’s also very quiet as it blends so it’s not that annoying blender sound.

I love that this has 2 functions but just 1 base it saves room not having all the extra parts. The nutrient and vitamin extraction is good for smoothies and the nutrient fusion is good for mixing things together. So many options with this! These healthy banana oatmeal muffins are my first attempt with this Nutri Ninja and I have a few more ideas for some new recipes I’ll be making soon.

    These were good muffins, actually fell asleep and baked muffins for over an hour and they were still delicious.
