There’s nothing like a good sweet treat. One of my favorites are peanut butter cups, but they are loaded with sugar. I decided to try and make my own and make it with less sugar. Here’s my own version of healthy peanut butter cups!
What You Need:
Coconut Oil
Dark Chocolate (they chips you can melt is best)
Your Favorite Peanut Butter (or almond butter)
Mini-muffin tin
cup liners
What You Do:
Place liners in the mini-muffin tins and spray with non-stick spray. In a bowl add in 1-2 teaspoons of coconut oil and melt some dark chocolate. Go in shorter increments and stir constantly. I usually do 30 seconds max. You don’t want the chocolate to burn!!! When it’s melted add a small amount of chocolate to the bottom of each cup.
Add in a small spoon or dollop of peanut butter to each cup. If you can spread it a little bit to make it even that’s best. I used a knife to do this. Next, add it more melted chocolates to try and cover the tops and completely cover the peanut butter.
Freeze for 10 minutes or until solid. Then EAT! Yummy!! My kids loved these and I loved that I used way less sugar and the dark chocolate is better for you, right?!!
