I had a fantastic post prepared for today about decorating your lawn/sidewalks for the 4th of July…but it required the participation of my daughters….who were invited to spend the night at their cousins’ house last night. Like I was gonna say no to a kid-free day today! So, scratch the 4th of July activity, and here’s my back-up fun for you today.
Lemon Blueberry Bundt Cake – Recipe level: Unbelievably Easy
I have an easy, YUMMY, semi-healthy dessert recipe to share with you! It is the perfect thing to bring to a summer party, 4th of July BBQ, pool party, etc. Simple. My fellow blogger, Shannon, made this for us a couple of years ago, and my family loved it. It’s a shortcut recipe…because we all need one of those here and there.
1 box lemon cake mix
2 individual size blueberry greek yogurt (with the fruit on the bottom)
Bundt cake pan
Follow the directions for the cake mix, but instead of eggs and oil, you will add the yogurt. Also, fill one of the yogurt containers with water, and add it to your mix. Bake as directed on the cake mix box (about 40 minutes), and that’s it! If you want a stronger blueberry component, you can add some frozen blueberries.
It’s very moist, similar to a pudding cake, so it doesn’t require a glaze. I like to serve it with cool whip and fresh blueberries on the side. However, if you want to add another touch of yum to your cake, here’s a simple glaze recipe. (Or, skip the glaze and dust some powdered sugar on top to make it pretty.)
2 cups confectioners’ sugar
3-4 tablespoons lemon juice (to taste)
