I’ve got to get better at meal planning. I’ve been really lazy this summer about our meals. I have been grocery shopping but with no real ‘plan’ set up I have no idea what I’ve been buying! I decided that was enough. I HATE doing grocery shopping/putting away groceries. I really do. It’s such a chore and takes forever! If I can somehow get to the store by myself then it’s not so bad but 2 kids in car seats and remembering my baby’s seat protector and our reusable grocery bags. It’s a chore! I spent some time this weekend planning out some things to make us accountable! I try to plan for 3-4 dinners a week and we eat leftovers/eat out in between. Now that I’m home with the kids I have to have breakfast/lunch things too! I’m putting links to the meals (if they have one) so you can see what we’re having!
Dinner Ideas:
Turkey Taco lettuce Wraps We’ve had these before and they are very good! I love all the extra fixings you can add on! I love fresh pico and homemade guacamole.
Honey Chicken Stir Fry This will be a new one for us but it looks easy. I hope it’s good! I’ll serve it with brown rice.
Spaghizza: This is one I’ve been wanting to try. We love pizza and spaghetti so why not together! I’ll serve it with a salad.
Grilled Fish (My husband grills outside) This time it’s trout!
I did all of my grocery shopping and have everything to make these 4 meals! We actually had the fish last night. Whenever my husband grills outside I like to keep it simple inside too with fruit or a simple salad. Last night with our fish we had roasted carrots that I got from Six Sisters Stuff. It’s super easy and kid friendly!
You need some baby carrots, ranch dressing mix, olive oil, gallon size bag. Put a bag of baby carrots in the gallon bag. Add a few good helpings of olive oil to coat the carrots, then sprinkle about 1/3 of ranch dressing mix in the bag. (I only used 1/3 and I thought it was plenty!) Seal the bag and try to rub the carrots together to get the coating on each carrot. Roast in the oven on a baking sheet on 400 for about 25-30 min until carrots are soft. My 14 mth old couldn’t get enough!!
