My kids love to snack. I like to give them better for you snacks and those are hard to come up with. These no bake peanut butter energy balls are both tasty and full of protein! They make great breakfast on the run ideas and also are great for good traveling snacks!

I first saw a recipe floating around about 2 years ago. The recipe calls for coconut but we aren’t fans of coconut so I leave that part out! Otherwise most of everything else we already had on hand. My kids love peanut butter and when you mix in chocolate chips, it’s sooo good!
Ingredients:
1 cup of old fashioned oats
1/2 cup of peanut butter (I use creamy)
1/2 cup of flax seed
1/2 cup of chocolate chips
1/3 cup of honey
1 tsp of vanilla
1/3 cup of coconut flakes (optional!)
Really it’s so simple! All you do is mix everything together in a bowl until you get a good mushy consistency. (I’ve made these so many times that I don’t even measure anymore!) Using your hands or cookie scoop, grab some of the mixture and roll into a ball as best you can. Sometimes if I’ve used too much pb I add a little more oats to the mix so it isn’t as sticky. Continue making balls until you have used up all the mix. I store mine in an air sealed container on the fridge. It keeps the balls cool and helps them stay together. I’m telling you, these are the best snacks! I’ve brought them to parties and kids and adults love them! They are great in lunches or for an afternoon snack. You’ve got to try them!!
