These pumpkin chocolate chip cookies are so tasty (and kid-friendly!) …. I bet you don’t eat just one!
Lately, I have found that we like pumpkin desserts. Our favorite was the cinnamon chip pumpkin muffins until I made these pumpkin chocolate chip cookies!
My kids were in the mood for something sweet after dinner one day so I decided to try making pumpkin cookies. These cookies are super moist and just sweet enough to curb your sweet tooth.
I did use an entire can of pumpkin and you can easily cut that in half if you’d like. Our cookies turned out really moist (maybe too moist?!) so I might cut the pumpkin to see if that helps.
The recipe is super easy to follow and similar to a good banana bread recipe.
Pumpkin Chocolate Chip Cookies
2 cups of flour
1/2 cup of sugar
1 can of pumpkin (or split in half if you want less moist)
1 egg
1/2 cup of vegetable oil
1 tsp of baking powder
1 tsp of vanilla
8 oz of chocolate chips
Optional:
Walnuts or oats would be a good addition to these and I might try next time!
Heat over to 350
In a bowl combine everything but the chocolate chips and stir to get the batter to a good consistency. Fold in the chocolate chips.
Grease a cookie sheet and scoop out to form cookies. Bake for 10-12 minutes.
Mine came out soft- not crunchy or crisp due to the pumpkin. Almost like a cake consistency.
These pumpkin chocolate chip cookies quickly became a family favorite and were eaten super fast!
