Pumpkin Sheet Cake

I was pinning some Fall recipes and came across this Pumpkin Sheet Cake recipe. I’m not much of a pumpkin person but I thought it sounded really good and I had almost everything on hand (except the pumpkin!)

Taste of Home recipe and Picture

Pumpkin Sheet Cake:
1 15 oz can of pumpkin
2 cups of sugar
1 cup of canola oil
4 eggs
2 cups of flour
2 tsp of baking soda
1 tsp of cinnamon (I used more!)
1/2 tsp of salt (I didn’t use this)

Steps:
Preheat oven to 350
In a large bowl beat the pumpkin, sugar, and oil. Beat in eggs. Combine flour, baking soda, cinnamon, and salt together in a separate bowl and slowly add in to egg/pumpkin mixture until well blended.

Pour into a greased cake pan. Bake 25-30 min.

It could not have been any easier! My house smelled so good and we couldn’t wait for it to cool. There are many yummy homemade cream cheese icing recipes but I took the easy route and bought Betty’s cream cheese frosting and it was just as good. Promise 🙂

The cake was a hit. My husband declared it the best cake he’s ever eaten. Go ahead, try some homemade pumpkin sheet cake! You’ll be happy you did!

    Mmm, this pumpkin cake looks delicious! I've been adding pumpkin recipe to my arsenal for the past few months as the flavour is a *new* favourite of mine!
