I love a good salad. I hate how expensive they are in restaurants! Sometimes $12-$15 just for lettuce! One of my favorite local lunch eateries serves a yummy strawberry poppy seed spinach salad. I did some experimenting and came up with my own version to their yummy poppy seed dressing and finally made my own salad at home for less than $6! This salad is very easy to make and you can do it with or without chicken. I like to use the pre-made fajita chicken that is cut up. I heat it up in the skillet and put it on the salad at the end. I usually have enough chicken for 2 salads. The strawberries are optional too but I love how the poppy seeds stick to them 🙂
Strawberry Poppy seed Salad with Chicken
Spinach Lettuce or Mixed Lettuce
Strawberries (cut up)
Slivered Almonds
Cranberries or any dried fruit
Feta (optional)
Grilled Chicken (chopped up)
Throw everything together in a bowl.
Basically anything you want or have on hand is great in this salad! Here’s a peek at mine. I had no feta (sad for me).
Poppy Seed Dressing:
2 parts olive oil
1 part apple vinegar
1 tsp honey
Poppy seeds (I love poppy seeds so I use a generous amount!)
Shake in a mason jar and pour over the salad
Since I was just making the salad for myself I just put a little bit of the dressing in a small cup. I always do a little taste test before pouring over my salad. Nothing worse then bad dressing!
That’s it, so simple! The flavors in the salad are just so good. I could eat it every night. It’s a great salad to take to work too or have for lunch. Do you have a favorite salad?

This looks incredible! I love strawberries and poppyseeds, and feta and almonds in salad. The only way I would make it different is with more vinegar less oil…I’m just a sucker for the sour stuff! 🙂
