Taco Soup

The weather is finally cooling off here. Here in North Texas, we got our first ‘arctic freeze’.  That’s code for low 40’s! It’s time for some soups and yummy chili. One of my favorite soups is a good taco soup. I love all the things you can pile on top of the soup too 🙂 I know there are many versions of taco soup but here’s mine…

Taco Soup:
1 lb of meat (I use turkey)
1 can of tomato sauce (8 oz)
taco seasoning
ranch dry seasoning
1 can of Rotel (mild)
1 can of black beans (or any beans you have)
1 can of chili (w/o beans)
1 can of corn

Basically I brown the meat, add taco seasoning and throw everything in a large pot. I do add about 8 oz of  water because I like my soup runny, and not so thick. For toppings we add cheese and sometimes chips. It’s so good and so easy. Perfect on a cold day!
