We all know that it’s important to eat your veggies. We hear benefits about them daily and know they are good for our bodies. The problem is, it’s hard to get all the veggies in your body that you should! I know that being a busy Mom, it can be especially hard to eat right.
I have found a few easy to get more veggies in me. If I spend the time to wash them (see my easy wash recipe below), prep them, then I tend to eat them for a snack. This way I am more inclined to eat my veggies throughout the week since they are ready to go. I have also found a great veggie lunch idea (more on that later).
Here are my tips to be veggie ready:
- Buy Veggies in Color: The first step is to buy veggies. Take some time in the produce section and get a variety of color. Try some new things! Get your kids involved when shopping and have them help find different colors. Veggies are way cheaper than snacks. You can save by getting these instead.
- Wash: I spend just a few minutes after my grocery trip to get my veggies washed. This is an easy thing to do first while I put the other groceries away. To make the wash: Fill your sink or a bowl with 1/2 cup of vinegar and 2 cups of water. Let veggies soak for at least 10 minutes. After 10 minutes, wash off with cold water and dry.
- Prep and Store: This is a big step for me to do to eat more veggies. I can buy them and wash them but I HAVE to prep them or they will just sit in the fridge. This can be tedious but if I do it the same day as I’m buying and washing I can be done for the week! After I wash them and dry I immediately cut and store in containers. This keeps me ready for any meal and is a great snack for myself or my kids.
Making healthier choices and eating more veggies doesn’t have to be difficult. It feels good to do better things for my body. Since I’m a working Mom, I take my lunch to school with me every day. I need something easy to heat up and something that will keep me going and get through the day.
Now for work, pack my veggies and some dressing, and I’m good to go for lunch! These are also ready throw in the kids’ lunches too!
