Here’s the recipe I use for my homemade pancake mix:
(Makes 4 batches of pancakes)
4 cups flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon kosher salt
2 tablespoons plus 2 teaspoons sugar
1. Whisk together all ingredients in a large bowl and store in an airtight container or zip-close plastic bag.
To make the pancakes (to serve 4 people)
1. Scoop one cup of dry pancake mix into a bowl. Add one egg, one cup of milk and one tablespoon of melted butter. Whisk until smooth.
2. Heat up your griddle and get busy making pancakes!
A good tip and time saver is to make up a batch on the weekends to save for the upcoming busy week. It takes just a few minutes to heat up my griddle and have fluffy homemade pancakes on the table!
